Dr. Sheila Adams
​Owner, Kai-Simone Winery

Dr. Adams is the esteemed proprietor of Kai-Simone Winery, a distinguished establishment in the heart of Texas Hill Country. In 2002, she earned her PhD from the University of Texas at Austin, continuing a remarkable journey that intertwined academic achievement with dedicated service. After a distinguished 28- year career in the U.S. Army's Medical Service Corps, Dr. Adams retired as a Lieutenant Colonel in 2016 after serving in notable leadership roles at home and abroad.

Dr. Adams was deployed to the Middle East in support of the Global War on Terrorism. During her military service, she earned an impressive array of commendations, including the Parachute Badge, the Global War on Terrorism Expeditionary Medal, the Korean Defense Service Medal, multiple Meritorious Service Medals, and the prestigious Legion of Merit.

Dr. Adams established Kai-Simone Winery and has managed its development and operations for the past six years. She has assumed a key responsibility in managing and directing the winemaking process. Under her leadership, the winery received over 60 awards, recognizing its wines. In 2025, the winery was honored as the “Best Winery/Distillery” by the Bulverde/Spring Branch Chamber of Commerce. Open to the public from Friday through Sunday, the winery offers a variety of experiences, including wine tastings, wine membership options, custom private tours and tastings, artisan classes, and event space for private gatherings.

​Dr. Adams shares her life with her husband, Dr. Donald Adams, with whom she has celebrated over 33 years of marriage. Together, they are proud parents to two beautiful young adult daughters, Jasmine and Leah.
